Easy Spaghetti and Meatballs
I have been pretty busy with booking travel for some great families and helping with my uncle's recovery.
A month after Hurricane Maria my uncle fell into a diabetic coma for a few days. When he awoke from the coma his balance was non-existent and he didn't even recognize us. The doctor said that the test showed no stroke. However, to the family and me it sure seemed like a mini-stroke. The brain in a mystery organ and the doctors may be wrong.
It has been close to (4) months of intensive physical therapy. He is currently in a physical rehab facility doing great and his memory is back. Though he doesn't remember his (1) month hospital stay. It's been a long (5) months for us. Uncle is a huge blessing we enjoy him living with us. There has been much prayer for his recovery. We got word this week that he will be home in March.
Dinner preparation has been quite a challenge. Yet my low cooker has come to my rescue many times.
The easiest way to make meatballs for spaghetti is the slow cooker:
2 lbs of ground beef
1/4 cup breadcrumbs
1/3 cup ricotta cheese
Mix all the ingredinet together. You can use a cookie scoop to make your meatball all the same size.
Put the first layer of meatballs in the slow cooker, pour some of the spaghetti sauce on top. Repeat the process with the rest of meatballs and sauce.
I set the low cooker to (4) hours but it only takes (2 1/2) hours to cook.
